Pops Guide to Seasoning Wild Game

The Pops Guide to Seasoning Wild Game: Venison, Hog, Duck, Dove & More

Anybody can season a ribeye. Wild game is a different animal, literally. It’s leaner, it eats what it finds in the woods and the fields, and it tastes like where it came from. That’s the good news and the challenge.

Season it right and you’ve got something store-bought meat can’t touch. Season it wrong and you get the “gamey” reputation that makes folks swear off deer meat for life.

Here at Pops BBQ Pit, we’ve spent years in the kitchen and around the camp fire figuring out what works. This guide covers the principles first, then goes animal by animal.

First, Let’s Talk About “Gamey”

Most “gamey” flavor isn’t the meat’s fault. It comes from three things:

  1. Handling in the field. Fast cooling, clean dressing, and keeping meat dry make the biggest difference of anything in this guide.
  2. Fat and silverskin. Deer, elk, and hog fat go waxy and strong-tasting. Silverskin turns chewy. Trim both aggressively.
  3. Overcooking. Lean meat cooked past medium goes dry, and dry meat tastes stronger and flatter.

Seasoning can’t fix bad handling, but it can make good meat great. The goal is to complement the natural flavor, not bury it.

The Five Building Blocks of a Great Wild Game Seasoning

Think of every blend as a team of five players:

  • Salt. The foundation. It seasons the meat deep down and mellows strong flavors. A good starting point is about 1 teaspoon of kosher salt per pound of meat.
  • Sweet. Brown sugar, honey, or molasses balances strong, mineral flavors and helps build a deep crust on the grill or smoker.
  • Heat. Black pepper, cayenne,or hot honey. Heat cuts through richness and gives lean meat some personality.
  • Acid. Vinegar, citrus, or buttermilk. Acid tenderizes and brightens. Use it for short marinades, because too long turns lean meat mushy.
  • Aromatics and earth. Garlic, onion, smoked paprika, rosemary, thyme, juniper, coffee. These tie the flavors to the woods and the fire.

When a blend tastes “off,” it’s usually missing one of these five.

Rub, Marinade, or Brine? Pick the Right Tool

Dry rub. Best for steaks, backstraps, roasts, and anything headed for the grill or smoker. Apply 30 minutes to overnight ahead of cooking. A rub also forms the “bark” that makes BBQ what it is.

Marinade. Best for tougher cuts and strong-flavored game. Keep it to 2 to 8 hours for most cuts, and always refrigerated. Oil carries flavor, acid tenderizes, and the aromatics do the rest.

Brine. Best for lean birds like dove, quail, wild turkey, and duck. A simple salt-and-sugar brine for 4 to 8 hours keeps them juicy.

Mixed into ground meat. Sausage, jerky, and burger need seasoning worked in evenly. Weigh your seasoning when you can, because consistency matters when you’re making batches.

Animal-by-Animal Seasoning Guide

Venison (Whitetail and Other Deer)

Venison is lean, mild, and slightly sweet when it’s handled well. It loves bold, smoky flavors.

  • Pairs with: black pepper, garlic, smoked paprika, brown sugar, coffee, cherry, rosemary, juniper, hot honey
  • Backstrap and tenderloin: Dry rub right before cooking, sear hot, and pull at medium-rare (135 to 140°F) for the best texture. USDA guidance for whole cuts is 145°F with a 3-minute rest, so cook to the level you’re comfortable with.
  • Roasts and shanks: Low and slow with a rub, then braise or smoke until fork-tender. Moisture and time do the work.
  • Ground venison: Cook to 160°F. Mix in fat (pork or beef fat) for burgers and sausage so it doesn’t dry out.
  • Jerky and sausage: Seasoning needs to be balanced for salt content and cure, so use a blend made for it.

Wild Hog

Wild hog ranges from excellent to rough depending on age and sex. Young sows and barrows are the sweet spot, and old boars need extra help.

  • Pairs with: sweet and tangy flavors, apple, brown sugar, mustard, black pepper, garlic, vinegar-based sauces
  • Roasts and shoulders: This is classic BBQ territory. Rub generously and smoke low and slow until it pulls apart.
  • Chops and tenderloin: A brine helps a lot. Cook to 160°F, since wild hog should be cooked through for safety.
  • Strong-flavored meat: Lean into sweet and acid. A honey- or apple-based rub with a vinegar mop sauce is hard to beat.

Duck and Goose (Waterfowl)

Duck is rich, dark, and fatty, and goose is leaner but strong. Both can handle serious flavor.

  • Pairs with: sweet heat, orange, honey, soy, ginger, brown sugar, black pepper, smoked flavors, fruit
  • Breasts: Score the skin, season well, and sear. Duck breast is often served medium-rare in restaurants, but USDA guidance for poultry is 165°F, so know your comfort level.
  • Whole birds and legs: Smoke or braise low and slow until the connective tissue breaks down.
  • Tip: A short brine takes the edge off stronger-tasting wild ducks. Heat and sweet go especially well here, which is why we built a camp-style rub for duck hunters.

Dove, Quail, and Other Small Birds

Small birds are delicate and dry out fast.

  • Pairs with: bacon, jalapeño, garlic, butter, black pepper, honey, citrus
  • Method: Brine briefly, season lightly, and cook hot and fast. Wrapping in bacon is a Southern classic for a reason.
  • Go easy: Strong rubs overpower small birds. A little goes a long way.

Wild Turkey

Wild turkey is leaner and more flavorful than store-bought, with a tendency to dry out.

  • Pairs with: sage, thyme, garlic, black pepper, butter, maple, smoked flavors
  • Breast: Brine, then cook to 165°F. Pull it the moment it hits temperature.
  • Legs and thighs: These are tough, so braise or smoke low and slow.

Rabbit and Squirrel

Mild, lean, and a Southern tradition.

  • Pairs with: mustard, garlic, thyme, black pepper, cayenne, buttermilk
  • Method: A buttermilk soak followed by frying is a classic. Braising works great too, and low, moist heat makes tough meat tender.

Five Pro Tips from Pops Kitchen

  1. Salt early. Salting ahead of time (even overnight for big cuts) seasons the meat all the way through.
  2. Add fat when the meat has none. Lean game benefits from butter, bacon, olive oil, or mixed-in pork fat.
  3. Rest your meat. Give steaks and roasts 5 to 10 minutes before slicing to hold the juices in.
  4. Season in layers. A little in the marinade, a little in the rub, and a finishing touch right before serving.
  5. Take notes. Write down what you used and how it turned out. That’s how a good recipe becomes your recipe.

Food Safety Reminder

Cook ground game to 160°F, wild hog to 160°F, and poultry to 165°F. Whole cuts of venison are safe at 145°F with a rest. Keep game cold from the field to the kitchen, and wash hands and surfaces after handling raw meat. When in doubt, use a thermometer.

Pop’s Wild Game Seasoning Collection

Introducing the Pop’s Wild Game Seasoning Collection

Built for the hunt. Perfected for the plate.

If you’ve ever spent long hours in the woods, you already know—bringing home wild game isn’t easy. It takes patience, skill, and respect for the process. And when it’s all said and done, that meat deserves more than a basic seasoning.

That’s exactly why we created the Pop’s Wild Game Seasoning Collection.

From Field to Flavor

At Pop’s BBQ Pit, we believe the work you put in out there should carry all the way to the final bite. This collection was built specifically for hunters, processors, and backyard pitmasters who want to do their harvest justice.

Every blend in this lineup is designed to enhance—not overpower—the natural flavor of wild game. Whether you’re working with venison, making deer jerky, or experimenting with other cuts, these seasonings are crafted to bring out the best in every bite.

What Makes It Different?

There’s no shortage of seasonings out there—but most weren’t made with wild game in mind.

The Pop’s difference comes down to three things:

1. Built for Wild Game
Wild game has a unique flavor profile, and it deserves a seasoning that complements it—not masks it. Our blends are balanced to highlight the meat, not cover it up.

2. Flavor That Works Everywhere
From jerky to burgers to backstrap on the grill, this collection is versatile. You can use it in the kitchen, at deer camp, or on the smoker.

3. That Signature Pop’s Touch
We’re known for bold, balanced flavor—and this collection delivers. Expect a mix of smoky depth, savory backbone, and just the right kick of heat or sweetness depending on the blend.

Perfect for Jerky, Grilling, and More

Whether you’re slicing up a batch of jerky or cooking for a full camp after a long day, these seasonings are made to perform.

  • Jerky Makers: Consistent, crave-worthy flavor in every batch
  • Grill Masters: Clean, bold seasoning that stands up to heat
  • Hunters & Processors: A reliable go-to for every cut

No guesswork. No over-complicating it. Just solid flavor that works.

Built for the Ones Who Put in the Work

This collection isn’t just about seasoning—it’s about respect for the process.

You put in the time scouting.
You made the shot count.
You handled the meat the right way.

Now it’s time to finish it right.

Try It for Yourself

Once you taste the difference, you’ll understand why this isn’t just another seasoning—it’s a step up in how wild game should be prepared.

If you’re ready to take your harvest to the next level, the Pop’s Wild Game Seasoning Collection is ready for you.
